Step-by-Step Instructions for Fried Egg Quesadilla
  1. Begin by heating a non-stick skillet over medium heat. Add a small pat of butter and let it melt until it begins to foam.
  2. Crack each large egg directly into the hot skillet, season with a pinch of salt and pepper. Cook for about 2-3 minutes until whites are set and yolks remain soft.
  3. In the same skillet, place a flour tortilla down and sprinkle half of the shredded cheese evenly over it.
  4. Carefully lay the fried eggs on top of the cheese, then follow with the sliced avocado. Scatter the remaining cheese over everything.
  5. Top off your quesadilla with the second tortilla, pressing it down gently and cook for about 2-3 minutes on one side, then flip and cook for another 2-3 minutes until crispy.
  6. Once cooked, remove the quesadilla from the skillet and let it cool slightly. Slice into wedges for serving.
