Step-by-Step Instructions for Mushroom Spinach Quinoa
  1. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and cover to simmer for 15 minutes. Let sit covered for an additional 5 minutes.
  2. In a large sauté pan, add 1 tablespoon of olive oil and heat over medium until shimmering.
  3. Sauté 4 minced garlic cloves in hot oil for about 1 minute until fragrant.
  4. Add 8 ounces of sliced cremini mushrooms and sauté for 3-4 minutes until tender.
  5. Stir in 2 cups of fresh spinach, 2 tablespoons of soy sauce, and 1/8 teaspoon of garlic powder. Cook for 2-3 minutes until spinach wilts.
  6. Add the fluffy quinoa to the sauté pan and stir well to combine all ingredients.
