  • 3 cups Hash Browns Freshly grated or well-drained frozen
  • 1 tablespoon Non-Stick Spray/Oil For greasing muffin tin
For the Egg Filling
  • 12 large Eggs Fresh and at room temperature
For Customizable Toppings
  • 1 cup Cheese Sharp cheddar or pepper jack recommended
  • 1 cup Bacon Crispy crumbles, can use turkey bacon
  • 1 cup Vegetables Sautéed spinach or bell peppers

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Thaw frozen hash browns thoroughly and squeeze out excess moisture. Season with salt and pepper.
  3. Grease a 12-cup muffin tin and press about 2 tablespoons of hash browns into each cup to form baskets. Bake for 15-20 minutes.
  4. Remove from oven and crack one egg into each hash brown basket.
  5. Return to the oven and bake for an additional 10-15 minutes until the eggs are set but slightly soft in the center.
  6. Allow to cool for a few minutes, then gently lift and serve warm.
