- Rinse the strawberries under cold water and gently pat them dry with a paper towel. Cut the tops off and hollow out a small portion of the inside using a small spoon or a paring knife, being careful not to break the sides.
- In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Beat with an electric mixer until smooth and creamy.
- Spoon or pipe the cheesecake mixture into each hollowed-out strawberry, filling them generously.
- Sprinkle graham cracker crumbs on top of each filled strawberry for a crunchy finish.
- Garnish with fresh mint leaves if desired. Serve immediately or refrigerate for up to 1 hour before serving.
