Ingredients
  

  • 1 pound fresh strawberries
  • 8 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 1/4 cup graham cracker crumbs
  • Fresh mint leaves for garnish optional

Method
 

  1. Rinse the strawberries under cold water and gently pat them dry with a paper towel. Cut the tops off and hollow out a small portion of the inside using a small spoon or a paring knife, being careful not to break the sides.
  2. In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Beat with an electric mixer until smooth and creamy.
  3. Spoon or pipe the cheesecake mixture into each hollowed-out strawberry, filling them generously.
  4. Sprinkle graham cracker crumbs on top of each filled strawberry for a crunchy finish.
  5. Garnish with fresh mint leaves if desired. Serve immediately or refrigerate for up to 1 hour before serving.
