- Begin by selecting large, ripe strawberries. Cut off the green stems and slice each strawberry in half. Scoop out a small indent in the center of each half to create space for the filling.
- In a mixing bowl, add heavy whipping cream and whip it until stiff peaks form, about 4 to 5 minutes. Set aside.
- In another bowl, combine softened cream cheese, sour cream, sugar, vanilla extract, and optional lemon juice. Blend until smooth, about 2 to 3 minutes.
- Gently fold the whipped cream into the cream cheese mixture until no streaks remain, keeping it light and airy.
- Transfer the cheesecake filling into a piping bag fitted with a star tip. Pipe the filling into the hollowed strawberries and arrange them on a platter.
