Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the sugar cookie mix with softened butter until well blended. Press the mixture into the bottom of a greased springform pan. Bake for 10-12 minutes until lightly golden. Let cool.
Make the Filling
  1. In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar. Add eggs one at a time and mix, then add vanilla extract.
Combine and Bake
  1. Pour the filling over the cooled crust. Bake for 25-30 minutes until edges are set and the center has a slight jiggle.
Cool and Chill

Serve
