Step-by-Step Instructions
  1. Preheat your air fryer according to the package instructions for the frozen hash brown patties. Cook them at 400°F for 10-12 minutes until golden and crispy. Set aside.
  2. As the hash browns cook, preheat your sandwich press to 400°F or heat a skillet over medium heat.
  3. In a skillet, add the chorizo sausage and diced onion, cooking over medium heat for 5-7 minutes until browned and onions are translucent. Transfer to a plate, leaving drippings in the skillet.
  4. Whisk the eggs with a pinch of salt and pepper. Pour into the skillet over medium-low heat and cook for about 3 minutes, stirring until just set.
  5. Lay a tortilla flat, add a hash brown, a spoonful of eggs, chorizo mixture, and cheese. Do not overfill.
  6. Roll the tortilla tightly around the filling, tucking in the sides. Cook in the sandwich press for about 2 minutes until golden and crispy.
  7. Let cool for a minute before serving hot with dipping sauces like avocado salsa or pico de gallo.
