  • 4 cloves minced garlic
  • 1 cup chicken broth

  • 2 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp dried thyme

  • 2 tbsp cornstarch
  • 1/4 cup water
  • 2 tbsp fresh parsley for garnish

Method
 

Step‑by‑Step Instructions
  1. Pat the chicken breasts dry and season with salt, black pepper, and smoked paprika.
  2. In a skillet, heat olive oil over medium-high heat and sear the chicken for about 3 minutes on each side.
  3. Layer sliced onions and minced garlic at the bottom of the crockpot.
  4. Place the seared chicken on top of the onion and garlic mixture in the crockpot.
  5. Mix the chicken broth, soy sauce, honey, Dijon mustard, and dried thyme in a bowl.
  6. Pour the sauce mixture over the chicken, ensuring it's coated well.
  7. Cover and cook on Low for 6-7 hours or High for 3-4 hours.
  8. Remove the chicken and keep warm while preparing the sauce.
  9. Whisk together cornstarch and water and add to the remaining liquid in the crockpot, cooking on High for 10-15 minutes to thicken.
  10. Return the chicken to the crockpot, allow it to soak up flavor, and serve with thickened sauce and parsley.
