Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into half-inch rounds.
  3. Drizzle olive oil over the rounds, sprinkle salt and pepper, and toss gently.
  4. Roast the sweet potato rounds for 25-30 minutes, flipping halfway through.
  5. Combine ricotta cheese with fresh herbs in a mixing bowl, adding optional lemon zest.
  6. Top each roasted round with herbed ricotta, then sprinkle with walnuts and cranberries.
  7. Serve warm as an appetizer or side dish.
