Step-by-Step Instructions
  1. Rinse the bones under cool running water for 2-3 minutes to remove impurities.
  2. In a large stockpot, combine the cleaned bones with cold water and bring to a gentle simmer over medium heat (about 15 minutes).
  3. Maintain a gentle simmer for about 30 minutes, avoiding rolling boil.
  4. Skim off foam and impurities that form on the surface after 30 minutes.
  5. Add crushed garlic and cilantro roots or stems, continuing to simmer for an additional 1.5 hours.
  6. During the final 20 minutes, add soy sauce and fish sauce, stirring to incorporate.
  7. Strain the broth through a fine mesh sieve into another pot or bowl.
  8. Cool the broth before transferring to airtight containers for storage.
