Instructions
  1. In a mixing bowl, combine fresh sweet corn kernels, all-purpose flour, large egg, and milk. Add baking powder, salt, black pepper, optional cayenne, chopped green onions, and grated cheddar cheese. Stir gently until just combined.
  2. Heat oil in a large skillet over medium heat. Drop dollops of the batter into the skillet and cook for 3-4 minutes per side until golden brown. Remove and drain on paper towels.
  3. In the same skillet, crack large eggs and cook to your preference for about 2-3 minutes.
  4. Build your sandwich with a fritter base, add an egg, crispy bacon or sausage, avocado slices, and arugula. Drizzle with hot sauce if desired.
  5. Top with another fritter and serve warm.
