Step-by-Step Instructions for Pillowy Soft Pretzel Bites
  1. In a stand mixer, combine flour, sugar, and yeast. Gradually add warm milk and melted butter while mixing on low speed for about 4-5 minutes.
  2. Transfer the dough into a greased bowl, cover, and let it rise in a warm spot for 30-60 minutes until doubled in size.
  3. Preheat the oven to 450°F (232°C) and bring 10 cups of water to a boil in a large pot. Carefully add baking soda and let it simmer.
  4. Punch down the dough, divide it into 12 pieces, roll into ropes, and cut into 1-2 inch pieces.
  5. Drop the dough pieces into the boiling water bath for 30 seconds. Remove with a slotted spatula and place on baking sheets.
  6. Whisk together egg and water for egg wash. Brush over each pretzel bite and sprinkle with coarse salt.
