  1. Preheat your oven to 375°F (190°C) and grease a baking dish with butter or oil.
  2. In a skillet, heat olive oil over medium-high heat. Season shrimp with salt and pepper, then sear for 1-2 minutes on each side until pink and opaque.
  3. Melt butter in the same skillet, add onion, and sauté until translucent. Stir in garlic, basil, and nutmeg, cooking for 30 seconds.
  4. Pour in heavy cream and simmer for 3-4 minutes, then mix in half of the Parmesan and all of the Monterey jack until melted.
