  • 2 large Eggs Essential for binding the mixture
  • 1 medium Onion Diced; shallots can be a milder alternative
  • 2 tbsp Soy Sauce Low-sodium preferred; can be omitted
  • 1 tsp Salt Adjust to your taste
  • 1 tsp Black Pepper Adjust to your taste
For the Topping
  • Additional Parmesan Cheese Sprinkled on top for a golden crust; add paprika if desired

Method
 

Step-by-Step Instructions
  1. Preheat oven to 375°F (190°C). Grease a baking dish with cooking spray or olive oil.
  2. In a medium skillet, add olive oil and sauté the diced onion until soft, about 5 minutes.
  3. In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half the grated Parmesan cheese. Mix gently.
  4. Transfer the mixture into the greased baking dish and shape it into a loaf.
  5. Sprinkle remaining grated Parmesan cheese on top. Optionally add paprika for extra flavor.
  6. Bake in preheated oven for 45-50 minutes until edges brown and internal temperature reaches 165°F (74°C).
  7. Allow to rest for about 10 minutes before slicing.
