- Preheat oven to 375°F (190°C). Grease a baking dish with cooking spray or olive oil.
- In a medium skillet, add olive oil and sauté the diced onion until soft, about 5 minutes.
- In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half the grated Parmesan cheese. Mix gently.
- Transfer the mixture into the greased baking dish and shape it into a loaf.
- Sprinkle remaining grated Parmesan cheese on top. Optionally add paprika for extra flavor.
- Bake in preheated oven for 45-50 minutes until edges brown and internal temperature reaches 165°F (74°C).
- Allow to rest for about 10 minutes before slicing.
