For the Cream Cheese Layer
  • 1 cup Cream Cheese Can replace with dairy-free cream cheese for vegan option
  • 1 large Egg Consider using flaxseed meal mixed with water for egg-free
  • 1 tsp Vanilla Extract Always go for real vanilla for best taste
  • 1 tbsp Lemon Juice Adds a refreshing acidity

Equipment

  • Mixing bowl
  • pastry cutter
  • Saucepan
  • Baking Pan
  • wire rack

Method

Step-by-Step Instructions
  1. In a mixing bowl, combine flour, brown sugar, and salt. Cut in cold, unsalted butter until mixture resembles coarse crumbs. Press into the bottom of a greased 20x30 cm baking pan.
  2. Remove stems from dried figs and chop coarsely. In a saucepan over medium heat, combine figs and a small amount of water. Cook for 5 minutes until softened, then blend with cooking liquid and lemon juice until smooth.
  3. In another bowl, beat cream cheese until creamy, gradually add sugar, vanilla, and egg. Mix until smooth. Spread this mixture over the fig layer.
  4. Preheat oven to 180°C (356°F). Bake for approximately 30 minutes, or until the top is lightly golden and the cream cheese layer is set but slightly jiggly.
  5. Allow the bars to cool completely on a wire rack. Chill in the refrigerator for at least 4 hours or overnight before slicing into squares.
