  1. In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Beat on medium speed for 2-3 minutes until smooth and fluffy.
  2. Add 1/4 cup of amaretto liqueur, 2 tablespoons of cherry juice, and 1 teaspoon of vanilla extract. Mix on low speed for 1-2 minutes.
  3. In a separate bowl, stir together 1/4 cup of granulated sugar and 1/4 cup of cherry preserves. Gradually add to the mascarpone blend, mixing for another minute.
  4. Gently fold in 1 cup of chopped fresh cherries into the mascarpone mixture with a spatula.
  5. Mix 1/2 cup of amaretto and 1/2 cup of cherry juice in a shallow dish. Dip ladyfingers quickly (1-2 seconds each).
