Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar for rolling
  • 2 tablespoons ground cinnamon for rolling

Method
 

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and 1 tablespoon of ground cinnamon. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the ½ cup granulated sugar and 2 tablespoons of ground cinnamon for rolling.
  7. Scoop out dough using a cookie scoop or tablespoon, roll into balls, and then roll each ball in the cinnamon-sugar mixture. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked; they will continue to cook on the baking sheet.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
