Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a shallow bowl, mix the flour, garlic powder, paprika, salt, and black pepper.
In another bowl, beat the eggs until well combined.
In a third bowl, combine the panko breadcrumbs and crumbled feta cheese.
Pat the chicken breasts dry with paper towels. Dredge each piece in the flour mixture, shaking off the excess.
Dip the floured chicken into the beaten eggs, allowing any excess to drip off.
Coat the chicken in the panko and feta mixture, pressing gently to adhere the crumbs.
Place the coated chicken breasts on the prepared baking sheet. Drizzle olive oil over the top of each piece.
Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
While the chicken is baking, mix honey and hot sauce in a small bowl. Adjust the heat level to your preference.
Once the chicken is done, remove it from the oven and drizzle the hot honey mixture over the top. Garnish with chopped parsley before serving.
