- Prepare the teriyaki glaze by combining soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a medium saucepan over medium heat. Stir well and bring to a gentle simmer. Cook for 5–7 minutes until slightly thickened.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add diced chicken and cook for 6–8 minutes until golden brown and fully cooked. Pour the teriyaki glaze into the skillet and toss chicken until coated.
- Fry wonton wrappers in a separate skillet with vegetable oil over medium-high heat for 1–2 minutes on each side until golden brown. Drain excess oil on paper towels.
- Assemble tacos by placing teriyaki chicken inside each wonton shell and topping with shredded cabbage, green onions, sesame seeds, and spicy mayo.
