Step-by-Step Instructions
  1. In a medium saucepan, combine fresh blueberries, sugar, lemon juice, and lemon thyme. Over medium heat, bring to a gentle boil and then reduce to medium-low. Simmer for about 20 minutes, stirring occasionally until thickened.
  2. After simmering, remove from heat and let cool for about 10 minutes.
  3. Spread blueberry compote on four slices of bread. Sprinkle cheese on two slices and top with remaining bread.
  4. In a skillet, heat butter over medium heat. Cook sandwiches for 2-3 minutes on each side until golden-brown and cheese is melted.
