- In a medium saucepan, combine fresh blueberries, sugar, lemon juice, and lemon thyme. Over medium heat, bring to a gentle boil and then reduce to medium-low. Simmer for about 20 minutes, stirring occasionally until thickened.
- After simmering, remove from heat and let cool for about 10 minutes.
- Spread blueberry compote on four slices of bread. Sprinkle cheese on two slices and top with remaining bread.
- In a skillet, heat butter over medium heat. Cook sandwiches for 2-3 minutes on each side until golden-brown and cheese is melted.
- Remove from skillet, cut in half, and optionally sprinkle with sea salt and thyme.
