  1. Cook the udon noodles according to the package instructions, typically about 6-8 minutes in boiling water. Reserve ½ cup of noodle water, then drain.
  2. In a large skillet, melt the butter over medium heat. Add garlic and shallot, stirring for 2-3 minutes until golden.
  3. Stir in gochujang and cook for 30 seconds. Add heavy cream and reserved noodle water, whisking until smooth. Incorporate soy sauce and gochugaru, simming for 5 minutes.
  4. Add cooked udon noodles to the sauce, tossing for 2-3 minutes to coat.
  5. Serve the noodles in bowls topped with Parmesan cheese, green onions, and egg yolk.
