For the Cheese Ball
  • 8 ounces Cream Cheese softened for easy blending
  • 1 cup Shredded Cheddar Cheese freshly shredded for best flavor
  • ¼ cup Dried Cranberries finely chopped for even distribution
  • ¼ cup Finely Chopped Pecans can substitute walnuts if desired
For the Coating
  • ¼ cup Remaining Cranberries leftover chopped to enhance decoration
  • ¼ cup Remaining Pecans for texture and crunch on the outside

Method
 

Directions
  1. On a small plate, combine ¼ cup of finely chopped dried cranberries and ¼ cup of finely chopped pecans. Mix thoroughly and set aside.
  2. In a stand mixer bowl, blend 8 ounces of softened cream cheese and 1 cup of shredded cheddar cheese on medium speed for 2-3 minutes until creamy.
  3. Add ¼ cup of chopped dried cranberries and ¼ cup of finely chopped pecans. Mix on low speed for about 1 minute.
  4. Gather the mixture and shape it into a compact ball. Use plastic wrap or parchment for easy handling.
  5. Roll the cheese ball in the reserved cranberry-pecan mixture until evenly coated.
  6. Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 1 hour.
  7. Remove from the refrigerator, unwrap, and serve on a platter with crackers and fresh veggies.
