Method
 

Step-by-Step Instructions
  1. In a food processor, combine fresh cranberries, honey, balsamic vinegar, brown sugar, minced garlic, orange juice, and zest. Blend until smooth.
  2. Place chicken thighs in a ziplock bag or deep dish, pour marinade over them, seal, and refrigerate for at least 2 hours (overnight is better).
  3. Preheat oven to 375°F (190°C) and grease an 8x8-inch baking pan. Arrange chicken thighs and pour remaining marinade over them. Add extra fresh cranberries. Bake for 25–30 minutes until the chicken is golden brown and internal temperature reaches 165°F (74°C).
  4. Mix honey and olive oil in a small bowl, and brush over baked chicken. Broil on high for 2–3 minutes to crisp the skin.
  5. Let chicken rest for about 10 minutes, garnish with fresh orange zest and cranberries, and serve warm.
