Preparation Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 to 7 minutes.
- Stir in minced garlic and chopped fresh sage, cooking for about 1 minute.
- Add pumpkin puree and cook for 2 to 3 minutes, stirring frequently.
- Pour in heavy cream and sprinkle grated Parmesan cheese, stirring continuously until smooth.
- Season the sauce with salt, pepper, and optional red pepper flakes, letting it simmer for 10 to 15 minutes.
- Cook choice of pasta in salted boiling water until al dente, about 8 to 10 minutes.
- Drain pasta, reserving ½ cup of pasta water, then add pasta to the skillet of sauce, tossing to coat.
- Mix in crumbled feta cheese and drizzle with melted butter, garnishing with toasted pumpkin seeds before serving.
