For the Pasta
  • 8 oz Pasta spaghetti or penne
For the Sauce
  • 1 cup Pumpkin Puree fresh roasted for best flavor
  • 6 oz Feta Cheese crumbled
  • 1 cup Heavy Cream or plant-based cream for dairy-free
  • ½ cup Parmesan Cheese grated, or nutritional yeast for vegan
  • 2 cloves Garlic minced
  • 2 tbsp Olive Oil or any cooking oil
  • 2 tbsp Fresh Sage chopped; substitute with 1 tbsp dried if needed
  • ¼ tsp Red Pepper Flakes optional
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Butter or vegan butter
  • 1 medium Onion chopped; can substitute with shallots
  • ½ cup Vegetable Broth or reserved pasta water
For the Garnish
  • ¼ cup Toasted Pumpkin Seeds or walnuts, optional

Method
 

Preparation Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 to 7 minutes.
  2. Stir in minced garlic and chopped fresh sage, cooking for about 1 minute.
  3. Add pumpkin puree and cook for 2 to 3 minutes, stirring frequently.
  4. Pour in heavy cream and sprinkle grated Parmesan cheese, stirring continuously until smooth.
  5. Season the sauce with salt, pepper, and optional red pepper flakes, letting it simmer for 10 to 15 minutes.
  6. Cook choice of pasta in salted boiling water until al dente, about 8 to 10 minutes.
  7. Drain pasta, reserving ½ cup of pasta water, then add pasta to the skillet of sauce, tossing to coat.
  8. Mix in crumbled feta cheese and drizzle with melted butter, garnishing with toasted pumpkin seeds before serving.
