  • 1 large Egg (for wash) Omit for a vegan option.
For the Crust
  • 1 each Prepared Pie Crust Can be store-bought or homemade.
For Garnish (optional)
  • 2 tablespoons Fresh Herbs Consider chives or parsley.

Method
 

Directions
  1. Boil the Potatoes: Peel and chop potatoes into chunks. Cover with cold, salted water, bring to boil and cook for 15-20 minutes until fork-tender.
  2. Mash the Filling: Drain potatoes, return to pot. Add butter, milk, cheese, salt, and pepper. Mash until smooth and creamy.
  3. Preheat the Oven: Preheat oven to 375°F (190°C). Roll out your pie crust during this time.
  4. Assemble the Pie: Roll out crust, place in pie dish, spoon in potato filling.
  5. Top It Off: If using a second pie crust, cover filling, crimp edges, and cut slits. Brush crust with beaten egg.
  6. Bake the Pie: Place in oven and bake for 25-30 minutes until golden brown.
  7. Cool & Serve: Let cool for 10 minutes before slicing. Serve warm.
