In a mixing bowl, combine the cottage cheese and egg. Mix until well blended.
Add the whole wheat flour, baking powder, salt, olive oil, garlic powder, and dried herbs (if using) to the bowl. Stir until a dough forms.
Lightly flour a clean surface and knead the dough for about 2-3 minutes until smooth.
Divide the dough into 4 equal portions and roll each portion into a ball.
Using a rolling pin, flatten each ball into a round flatbread, about 1/4 inch thick.
Heat a non-stick skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through.
Remove from the skillet and let cool slightly before serving.
