  • 1 tsp Black Pepper freshly ground preferred
For the Sauce
  • 3 cloves Garlic minced, fresh preferred
  • 1 medium Onion chopped, yellow or white
  • 10.5 oz Cream of Mushroom Soup can substitute with any creamy soup variant
  • 1 cup Low-Sodium Chicken Broth or vegetable broth for a vegetarian option
  • 2 tbsp Low-Sodium Soy Sauce or coconut aminos for gluten-free
  • 1 tsp Paprika smoked paprika for extra kick
  • 1 tsp Dried Thyme fresh thyme if available
For the Rice
  • 2 cups Cooked Rice white or brown, or try quinoa

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper, then sear in a skillet for about 5 minutes on each side until golden brown.
  3. Sauté chopped onions and minced garlic in the same skillet for about 3 minutes until translucent.
  4. Combine cream of mushroom soup, chicken broth, soy sauce, paprika, and thyme in a bowl; whisk until smooth.
  5. Arrange seared chicken in the baking dish and pour the sauce evenly over it.
  6. Cover with aluminum foil and bake for 30-35 minutes until chicken reaches 165°F (74°C).
  7. Let rest, then serve chicken over rice, drizzled with sauce.
