- In a large mixing bowl, combine 15 ounces of ricotta cheese, 1 cup of powdered sugar, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, and ½ cup of mini chocolate chips. Blend until smooth and creamy. Set aside.
- Preheat your oven to 375°F (190°C).
- Take one pre-made pie crust and fit it into the bottom of a greased 9x9-inch baking dish.
- Spoon the creamy ricotta filling evenly over the prepared crust, spreading it gently.
- Place the second pie crust over the filling and seal the edges by crimping. Brush with an egg wash and sprinkle sugar on top.
- Bake for 30–35 minutes until golden brown and bubbly around the edges.
