For the Creamy Peanut Dressing
  • 0.5 cup Creamy Peanut Butter Or almond butter for nut-free
  • 3 tablespoons Fresh Lime Juice Freshly squeezed
  • 1 tablespoon Honey Or agave nectar for vegan
  • 1 teaspoon Fresh Ginger Finely grated
  • 2 to 4 tablespoons Warm Water To adjust consistency

Method
 

Preparation Steps
  1. Marinate chicken by combining it with soy sauce, cornstarch, and minced garlic. Let sit for 10 minutes.
  2. Heat 1 tablespoon of oil in a skillet. Cook marinated chicken until golden brown, about 6-8 minutes.
  3. In the same skillet, cook chilled jasmine rice undisturbed for 5-7 minutes, then flip and cook for an additional 6-8 minutes.
  4. Whisk together peanut butter, lime juice, honey, ginger, and warm water until smooth to prepare dressing.
  5. In a mixing bowl, combine crispy rice, cooked chicken, cabbage, carrots, cucumber, and cilantro. Toss well.
  6. Pour peanut dressing over the salad mixture and toss gently to combine.
