  • 4 cups Cooked Chicken Leftover rotisserie chicken works great.
  • 1 cup Artichoke Hearts Canned, drained, and chopped.
  • 10 oz Frozen Chopped Spinach Can substitute with fresh spinach that's sautéed and drained.
  • 1/2 cup Mayonnaise Greek yogurt can lighten the dish.
  • 1/2 cup Sour Cream
  • 3/4 cup Mozzarella Cheese Shredded.
  • 3/4 cup Parmesan Cheese Shredded.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil For greasing the pan.
For the Topping
  • 1 cup Breadcrumbs Using panko gives extra crispness.
  • 2 tablespoons Butter Melted.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Combine the cooked chicken, chopped artichoke hearts, and thawed spinach in a large mixing bowl.
  3. Add the mayonnaise, sour cream, mozzarella cheese, and Parmesan cheese. Sprinkle in the garlic powder, onion powder, black pepper, and salt. Stir until well combined.
  4. Grease a 9x13-inch baking dish with olive oil.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Combine the breadcrumbs with melted butter in a small bowl.
  7. Sprinkle the breadcrumb mixture over the casserole, then add remaining mozzarella and Parmesan cheese on top.
  8. Cover with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes until golden brown.
  9. Remove from the oven and let it cool for a few minutes before serving.
