- Cook the tortellini in a large pot of salted boiling water according to package instructions, drain and keep warm.
- Heat olive oil in a large skillet, sear thinly sliced steak for 3–4 minutes until browned, then transfer to a plate.
- Sauté onions, green bell pepper, and minced garlic in the same skillet for 5–6 minutes until softened.
- Add beef broth, scraping up browned bits, and let simmer for 2–3 minutes.
- Stir in heavy cream and let simmer for 4–5 minutes until the sauce thickens.
- Gradually add shredded provolone cheese, stirring continuously until melted.
- Combine seared steak with the creamy sauce, season with salt and pepper.
- Fold in the cooked tortellini, mixing well to coat.
- Garnish with parsley and serve hot.
