- Preheat your waffle iron and lightly grease it with butter or non-stick spray.
- In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt until smooth.
- In a separate bowl, combine the buttermilk, melted butter, eggs, and honey, whisking until smooth.
- Fold the wet ingredients into the dry, stirring in the cheddar cheese and jalapeños.
- Pour about 3/4 cup of batter onto each section of the iron and cook for 5-7 minutes until golden brown.
- Serve hot, optionally topped with sour cream, avocado, or honey.
