  • 1 sheet Puff Pastry thawed and rolled out
  • 4 medium Yellow Onions thinly sliced
  • 2 tablespoons Olive Oil for caramelizing
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 2 tablespoons Fresh Thyme for seasoning
Optional Enhancements
  • 1/2 cup Gruyère or Parmesan Cheese grated
  • 1 tablespoon Fresh Rosemary optional
  • 1 sheet Gluten-Free Puff Pastry for gluten sensitivities

Method
 

Preparation Steps
  1. In a heavy skillet, heat olive oil over medium-low heat. Add sliced onions, salt, and black pepper. Cook for 35-45 minutes until golden brown and jammy.
  2. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper. Roll out puff pastry into a rectangle about 1/8 inch thick.
  3. Spread the cooled caramelized onion mixture over the pastry, leaving a half-inch border. Sprinkle with fresh thyme.
  4. Roll the pastry tightly from the edge opposite the border. Slice the log into ½-inch rounds and arrange on the baking sheet.
  5. Bake for 18-22 minutes or until golden brown and puffed.
