- Cut the mozzarella cheese into 1-inch cubes and set them aside on a plate.
- Crumble the cooked bacon into small pieces and wrap a slice around each mozzarella cube.
- In a large bowl, combine the ground chicken, garlic powder, onion powder, paprika, salt, black pepper, and half of the buffalo sauce.
- Take a portion of the chicken mixture, flatten it, place the wrapped cheese in the center, and encase it completely with the chicken mixture.
- Roll each bomb in flour, dip in egg, and coat with breadcrumbs.
- Heat oil to 350°F (175°C) and fry the bombs for 5-6 minutes until golden; or bake at 400°F (200°C) for 18-20 minutes.
- Remove from oil or oven, drizzle with remaining buffalo sauce, and serve warm.
