  • 1 cup Rolled Oats Substitute with gluten-free oats if desired
  • 1 Large Egg Or use a flax egg for vegan option
  • 2 tbsp Honey or Maple Syrup Adjust to taste
  • 1 tsp Vanilla Extract Opt for pure vanilla for best results
  • 1 tbsp Lemon Zest Avoid lemon juice to maintain texture
  • 1 tsp Baking Powder
  • 1 pinch Salt

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan.
  2. Blend cottage cheese, rolled oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt until smooth.
  3. Gently fold in the blueberries with a spatula.
  4. Let the batter rest for about 5 minutes.
  5. Fill each muffin cup about ¾ full with batter.
  6. Bake for 18-22 minutes until firm and light golden.
  7. Cool the bites in the pan for 5 minutes before transferring to a wire rack.
