  • 2 tbsp Light Soy Sauce Enhances flavor
  • 2 tbsp Kewpie Mayo Creamy and sweet
  • 1 tbsp Sriracha Adjust for heat
  • 1 tsp Sesame Oil Nutty aroma
For the Sushi Rice
  • 1.5 cups Sushi Rice Base of the dish
  • 1 tbsp Rice Vinegar Enhances flavor
  • 2 tsp White Sugar Balances acidity
For the Cups
  • 3 large Nori Sheets Cut into squares
  • to taste Furikake Optional garnish
  • 2 stalks Green Onion Chopped for garnish
  • as needed Cooking Spray For greasing

Method
 

Preparation Steps
  1. Cook sushi rice according to package instructions, then mix with rice vinegar and sugar.
  2. Preheat the oven to 400°F (200°C).
  3. In a bowl, combine cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  4. Cut nori sheets into 4-inch squares to line muffin tin cavities.
  5. Grease muffin tin, place sushi rice in nori squares, and top with salmon mixture.
  6. Bake for 15 minutes until salmon is cooked and tops are golden.
  7. Let cool, garnish with furikake and green onions, and serve warm.
