A delicious and colorful Yaki Udon Stir-Fry featuring udon noodles, fresh vegetables, and optional protein for a satisfying meal.

Ingredients

  • 8 ounces udon noodles
  • 2 tablespoons canola oil
  • 1 cup diced shiitake mushrooms
  • 1 cup diced bell peppers (red and yellow)
  • 1 cup grated carrots
  • 1 cup sugar snap peas
  • 3 green onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tamari sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sweet rice wine
  • 1 teaspoon toasted sesame oil
  • Salt and black pepper to taste
  • Optional: 1 cup pre-cooked protein (chicken, shrimp, or tofu)

Instructions

  1. Boil the udon noodles according to the package instructions. Once cooked, drain and set aside.
  2. In a large frying pan or wok, warm the canola oil over medium-high heat.
  3. Add the minced garlic and sauté for about half a minute until fragrant.
  4. Add the diced mushrooms, bell peppers, grated carrots, and sugar snap peas. Stir-fry for approximately 4-5 minutes until vibrant and slightly tender.
  5. If using protein, add it now and stir well to combine.
  6. Gently fold in the udon noodles, followed by the tamari sauce, fish sauce, sweet rice wine, and toasted sesame oil. Mix thoroughly.
  7. Adjust seasoning with salt and black pepper as desired.
  8. Cook for an additional 2-3 minutes, stirring continuously until heated through.
  9. Remove from heat and sprinkle in the chopped green onions before serving hot.

Notes

  • For an extra kick, add a teaspoon of chili paste or sriracha during stir-frying.
  • For a vegetarian option, use tofu and substitute fish sauce with a plant-based alternative.
