Sweet Chili Shrimp with Asparagus is a delicious and easy-to-make dish that combines succulent shrimp with tender asparagus in a flavorful sweet chili sauce.

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Cooked rice or quinoa, for serving (optional)

Instructions

  1. In a large bowl, combine the sweet chili sauce, soy sauce, lime juice, garlic, and ginger. Add the shrimp and toss to coat. Let marinate for 15-20 minutes.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the asparagus and sauté for about 3-4 minutes until tender-crisp. Season with salt and pepper. Remove the asparagus from the skillet and set aside.
  3. In the same skillet, add the marinated shrimp along with the marinade. Cook for 3-4 minutes, stirring occasionally, until the shrimp are pink and cooked through.
  4. Return the asparagus to the skillet and toss to combine with the shrimp. Cook for an additional 1-2 minutes to heat through.
  5. Serve immediately over cooked rice or quinoa if desired.

Notes

  • For a spicier kick, add a teaspoon of red pepper flakes to the marinade.
  • You can substitute the asparagus with broccoli or snap peas for a different flavor and texture.
