Instructions
Rinse the strawberries under cold water and gently pat them dry with a paper towel. Remove the green tops and hollow out the center of each strawberry using a small knife or a melon baller.
In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
Fold in the mini chocolate chips and crushed graham crackers, if using, until evenly distributed.
Using a piping bag or a small spoon, fill each hollowed strawberry with the cream cheese mixture.
Arrange the stuffed strawberries on a serving platter. Garnish with fresh mint leaves if desired.
