2 cups cooked jasmine rice
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1 avocado, sliced
1 cup shredded carrots
1 cup cucumber, thinly sliced
2 green onions, chopped
1 tablespoon sesame seeds
1/2 cup mayonnaise
2 tablespoons sriracha sauce
1 teaspoon lime juice
Instructions
In a small bowl, mix together the mayonnaise, sriracha sauce, and lime juice to make the spicy mayo. Set aside.
In a large skillet, heat the olive oil over medium heat. Add the shrimp, garlic powder, paprika, salt, and pepper. Cook for 3-4 minutes, or until the shrimp are pink and opaque.
To assemble the bowls, divide the cooked jasmine rice among four bowls.
Top each bowl of rice with the cooked shrimp, sliced avocado, shredded carrots, cucumber, and green onions.
Drizzle the spicy mayo over the top and sprinkle with sesame seeds. Serve immediately.
Notes
For added flavor, marinate the shrimp in lime juice and garlic for 15 minutes before cooking.
You can also substitute the shrimp with grilled chicken or tofu for a different protein option.
