2 cups white chocolate chips
1 cup strawberries, hulled and chopped
1 cup blueberries
1 tablespoon coconut oil
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
Line a baking sheet with parchment paper and set aside.
In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth. This should take about 1-2 minutes.
Stir in the vanilla extract and a pinch of salt into the melted chocolate.
Pour the melted chocolate onto the prepared baking sheet and spread it into an even layer using a spatula.
Sprinkle the chopped strawberries and blueberries evenly over the melted chocolate. Press them down gently to ensure they stick.
Place the baking sheet in the refrigerator for about 1 hour, or until the chocolate is completely set.
Once set, break the bark into pieces and serve.
Notes
For a fun twist, try adding crushed nuts or sprinkles on top before chilling.
You can also substitute the strawberries with raspberries for a different flavor profile.
