1 crusty Italian loaf, cut into 1/2-inch thick slices (approximately 12 slices)
2 cups fresh tomatoes, chopped
1/4 cup fresh parsley, finely chopped
2 cloves of garlic, finely chopped
1/4 cup high-quality olive oil
1 tablespoon red wine vinegar
Salt and freshly cracked black pepper to taste
1/2 cup crumbled feta cheese (optional)
Instructions
Begin by preheating your oven to 425°F (220°C).
In a bowl, mix together the chopped tomatoes, parsley, garlic, olive oil, red wine vinegar, salt, and pepper. Allow the mixture to sit for about 10 minutes to enhance the flavors.
Place the slices of Italian loaf on a baking tray. Lightly drizzle olive oil over each slice.
Toast the bread in the oven for approximately 6-8 minutes, or until they achieve a golden-brown color and a crispy texture.
Once the bread is toasted, take it out of the oven. If you’re using feta cheese, sprinkle it generously over each slice and pop them back in the oven for an extra 2-3 minutes until the cheese softens.
Spoon the tomato mixture generously onto each slice of toast. Serve right away for the best taste experience.

For a vegan option, omit the feta cheese.
