Peach Cobbler Egg Rolls are a delightful twist on traditional peach cobbler, featuring a crispy exterior and a sweet peach filling.

  • 2 cups ripe peaches, peeled and chopped
  • 1/2 cup brown sugar
  • 1 teaspoon nutmeg
  • 1 tablespoon fresh lime juice
  • 1 tablespoon tapioca starch
  • 1 package (14 oz) spring roll wrappers
  • 1 cup coconut oil (for frying)
  • 1/4 cup cinnamon sugar (for dusting)
  • Mint leaves (optional, for garnish)

Instructions

  1. Mix the chopped peaches, brown sugar, nutmeg, lime juice, and tapioca starch in a bowl. Allow the mixture to rest for about 10 minutes.
  2. Place a spring roll wrapper on a flat surface with one corner facing you. Spoon approximately 2 tablespoons of the peach filling into the center.
  3. Fold the bottom corner over the filling, tuck in the sides, and roll it up tightly, sealing the top edge with a dab of water.
  4. Heat the coconut oil in a deep pan over medium-high heat. Once shimmering, add the spring rolls in batches, frying until golden and crispy (about 3-4 minutes per side).
  5. Transfer the fried spring rolls to a plate lined with paper towels to absorb excess oil.
  6. While warm, sprinkle the spring rolls generously with cinnamon sugar and serve hot, garnished with fresh mint leaves if desired.

  • Ensure the oil is hot enough before adding the spring rolls to achieve a crispy texture.
  • Adjust the sweetness by adding more or less brown sugar based on your preference.
