8 oz cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
1 cup whipped topping (like Cool Whip)
4 large flour tortillas
½ cup mini chocolate chips
Fresh strawberries or fruit of choice for garnish
Instructions
In a medium bowl, combine the crushed Oreo cookies, softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
Gently fold in the whipped topping until fully incorporated, creating a light and fluffy cheesecake filling.
Lay a flour tortilla flat on a clean surface. Spread a generous layer of the cheesecake filling over the entire tortilla, leaving a small border around the edges.
Sprinkle mini chocolate chips evenly over the cheesecake filling.
Starting from one edge, carefully roll the tortilla tightly, similar to rolling sushi. Make sure to keep the filling inside as you roll.
Once rolled, use a sharp knife to slice the roll into bite-sized pieces, about 1 inch thick.
