Instructions

  1. Start by mixing the crushed graham crackers with the melted butter in a medium bowl until the mixture resembles wet sand. Press this mixture firmly into the base of a 9-inch springform pan to create a solid crust. Place it in the refrigerator for about 15 minutes to firm up.
  2. In a large bowl, use an electric mixer to beat the softened cream cheese until it’s creamy and smooth. Gradually add in the confectioners’ sugar and vanilla extract, continuing to mix until everything is well blended.
  3. In another bowl, whip the heavy cream until it forms stiff peaks. Carefully fold the whipped cream into the cream cheese mixture, ensuring it remains light and airy.
  4. Spoon half of the cheesecake mixture onto the chilled crust, spreading it evenly. Layer the banana slices, strawberries, and pineapple chunks on top of the cheesecake layer.
