Lembas Bread is a traditional bread recipe that is easy to make and delicious, perfect for serving with meals or as a snack.

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional)
  • 1/4 cup chopped nuts or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, baking powder, salt, and cinnamon (if using). Mix well.
  3. In another bowl, cream together the softened butter and honey until light and fluffy.
  4. Add the milk and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in the chopped nuts or dried fruit.
  6. Turn the dough out onto a floured surface and knead gently for about 1 minute until smooth.
  7. Roll the dough into a rectangle about 1/2 inch thick. Cut into squares or rectangles, about 3 inches by 3 inches.
  8. Place the pieces on the prepared baking sheet and bake for 15-20 minutes, or until lightly golden.
  9. Allow to cool slightly before serving.

Notes

  • For a sweeter version, increase the honey to 1/3 cup.
  • To make it more traditional, wrap each piece in a large leaf (like banana leaves) before serving for an authentic touch.
