2 pounds boneless, skinless chicken thighs
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon olive oil
1/2 cup crumbled feta cheese
1/4 cup honey
1 tablespoon red pepper flakes (adjust to taste)
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, season the chicken thighs with salt, black pepper, garlic powder, and onion powder. Toss to coat evenly.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken thighs and sear for about 4-5 minutes on each side until golden brown.
In a small bowl, mix together the honey, red pepper flakes, and lemon juice. Pour this mixture over the seared chicken in the skillet.
Sprinkle the crumbled feta cheese over the chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
Notes
For a spicier kick, increase the amount of red pepper flakes or add a dash of cayenne pepper.
