A quick and tasty meal featuring ground turkey stir-fried with colorful vegetables and coated in teriyaki sauce.

  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup teriyaki sauce
  • 1 tablespoon sesame seeds (optional)
  • Cooked rice or quinoa for serving

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the ground turkey and cook until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks.
  3. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the sliced bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Pour the teriyaki sauce over the turkey and vegetables, stirring to coat everything evenly. Cook for another 2-3 minutes until heated through.
  6. Remove from heat and sprinkle with chopped green onions and sesame seeds, if using.
  7. Serve hot over cooked rice or quinoa.

Notes

  • For added heat, include red pepper flakes or a splash of sriracha in the stir fry.
  • Substitute ground turkey with ground chicken or beef for a different flavor profile.
