- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- Additional butter or oil for cooking
- In a large bowl, combine the ricotta cheese, milk, eggs, and vanilla extract. Whisk until smooth.
- In another bowl, mix the flour, sugar, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the melted butter.

- Pour about 1/4 cup of batter for each pancake onto the skillet.
