Deliciously fluffy pancakes made with ricotta cheese, perfect for a delightful breakfast.

Ingredients

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • Additional butter or oil for cooking

Instructions

  1. In a large bowl, combine the ricotta cheese, milk, eggs, and vanilla extract. Whisk until smooth.
  2. In another bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  4. Fold in the melted butter.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet.
  7. Cook until bubbles form on the surface, about 2-3 minutes.
  8. Flip and cook for another 2-3 minutes until golden brown.
  9. Serve warm with your favorite toppings such as maple syrup, fresh berries, or whipped cream.

Notes

  • For a lighter version, substitute half of the ricotta with Greek yogurt.
  • For added flavor, mix in lemon zest or cinnamon to the batter before cooking.
