1 medium zucchini, sliced into 1-inch rounds
1 bell pepper (any color), cut into 1-inch squares
1 red onion, cut into wedges
8 ounces cherry tomatoes
8 ounces mushrooms, whole or halved if large
3 tablespoons olive oil
2 teaspoons garlic powder
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
8 wooden or metal skewers
Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
In a large bowl, combine the olive oil, garlic powder, oregano, salt, and black pepper. Mix well.
Add the zucchini, bell pepper, red onion, cherry tomatoes, and mushrooms to the bowl. Toss until all the vegetables are evenly coated with the marinade.
Preheat the grill to medium-high heat.
Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation.
Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
Remove from the grill and let cool for a few minutes before serving.
Notes
For added flavor, sprinkle the skewers with fresh herbs like parsley or basil before serving.
You can customize the skewers by adding other vegetables like asparagus, eggplant, or corn, or even marinating them in a different sauce like teriyaki or balsamic glaze.
